Sadly, the more I hear about Citroen hybrid and eC4 full electric battery range woes, together with their awful My Citroen App, the less inclined I am to pursue either with Citroen.
I just don't think the technology (nor the cost) has reached where it should be for the masses.

For what it's worth... in our C4 Shine Plus, the temperature controls remain as were before the engine was switched off.
I believe its a NAC system.
The constant re-set to 21 sounds like a fob off to me too.

It's rubbish ! Mine ( android) updated June 22nd to latest 1.35.1 and it refused to work as your has, for almost three weeks. Phone connects ok.. but no data from the app flows.. just refused to connect. I uninstalled, re-installed and now its just hit and miss... mostly miss.. A total waste of time...

FWIW, On our previous C5 Aircross ( 2020 Feel Plus) there WAS indeed a button on the dash with a x2 icon to open the rear tailgate. ( as well as the fob and hands free functions) As far as I am aware though, this was discontinued in late 2020 and is now as Juan says, fob or tailgate operation only. ...
